You win some, you lose some…

I would love for this blog to be all about my successes and I’d love to hide my failures from everyone. However, I want this blog to be a complete record of my journey, so I think I need to be as honest as I can be. So, here goes the honesty…

After coming back from a week away on vacation, there was nothing to eat in the house, so I went to the store, and decided that I would make Rosemary-Roasted Chicken and Garlic and Spaghetti Squash with Mushrooms and Herbs. Now, hubby had asked for me to just make some simple chicken for dinner since we had been eating pretty heavily (especially carb heavy) over vacation. I didn’t want to make my staple chicken cutlets, and this chicken recipe looked rather simple, and sounded like it would be tasty. Well, I’m here to tell you that we were not big fans of this recipe. First off, unbeknownst to me, hubby is not a fan of rosemary! I use rosemary all the time, but when it’s the only herb in the recipe, and when there’s a lot of it, I agree, it can be overwhelming. Overall, I didn’t think that the Rosemary-Roasted Chicken and Garlic was bad, it just wasn’t great either. Since it wasn’t a hit with the hubby, it will not be making a reappearance at our dinner table.

Now, onto Spaghetti Squash with Mushrooms and Herbs. Let me tell you a little about our son. If I had to describe his eating habits I’d call him a carnivore with a side of fruitarian. He will eat steak, chicken, fish, hot dogs, you name it. He’ll eat french fries, but what kid wouldn’t (and what parent would steal a few)? He can also eat fruit, and only fruit, all day long, and be happy. Strawberries (or as he likes to call them, strawbebebies), grapes, apples, peaches, plums. He could sit down and eat half a cantaloupe all by himself! He loves pasta, but since we’re cutting carbs, I’d like him to eat what we are eating. Not that I’m against making pasta for him as a side occasionally, but I’d like to find a way to get vegetables into his diet. I have been curious about trying spaghetti squash since my mother-in-law told me about it. I, of course, told my little man that we were having pasta. This recipe was pretty simple and straighforward, and honestly, a little bland. However, he did try the “pasta” and he did actually eat some. So, spaghetti squash is something that I will be making again. I think I’ll just keep looking for different recipes.

So, while I don’t think that this was my most successful meal, the men in my life were good sports and ate it anyway. I’m learning what works well for us, and what doesn’t. Not every meal will be a homerun, but I will continue to trudge along, cooking and learning. But no matter what the food is, sitting down to dinner together as a family is really the best part of this whole experience.

  1. Doug made this last week and it came out quite well! We also made a spaghetti squash with tomato and basil recipe on Friday, to which I added some garlic and parmesan to, then breaded some chicken and had a sort – of chicken parmesan dinner! MMMMM 🙂
